Yoshinogawa Sake brewery was founded in 1548, and is the oldest brewery in Niigata Prefecture. Niigata is the only prefecture that has a prefectural government run Sake Research Institute that supports research to promote better sake making. I feel this decision by the Niigata sake brewers to work together to make better sake helped establish Niigata as a center for outstanding sake.
Yoshinogawa Daiginjo Sake is made from Gohyakumangoku and koshi-tanrei strains of rice, and the freshest proprietary yeast. Yoshinogawa Daiginjo Sake is then aged slowly for 3 years in a below 0 environment create exceptional, big, full of lush fruit and spice notes from the aroma to the finish.
