OUR DISTILLER For Oola owner and distiller, Kirby Kallas-Lewis, Oola is a labor of love, intellectual curiosity and commitment to the neighborhood he has called home for more than two decades. Kirby has been studying the art and science of distilling intensively. He has participated in numerous workshops, tastings, and conferences on the topic of craft distilling by some of the leaders in the industry. A former artist and tribal art dealer, Kirby has long been interested in the power that great food, wine, art, cocktails and entertaining have in connecting people to each other and to a place.
OOLA Distillery Waitsburg Bourbon Whiskey is a medium-full bodied Bourbon has a bouquet of vanilla, caramel and cherry. The spicy kick of a high rye content is balanced by sweet, smooth corn and the unmistakably silky viscosity of organic Washington soft white winter wheat (grown in Waitsburg, WA). Aged initially in ten-gallon American oak casks and then matured in 53-gallon barrels, this meticulously handcrafted Bourbon displays notes of brown sugar and maple syrup without the woody harshness that can result from extended micro-barrelling. Its mellow tannins and complex layers unfold into a finish of buttery oak, toffee and again the brightness of fresh cherries.
NOSE: Vanilla, caramel, cherry.
PALATE: Medium body, spice, brown sugar, maple syrup, oak.
FINISH: Long, buttery oak, toffee, cherry.
