Los Siete Misterios is a Mexican company founded in 2010 with a single ideal: to rescue the tradition of mezcal, while stimulating the micro-economies and promoting the rural cultures producing mezcal.
That is how we link the past to the present and find it again, combining the best of both worlds, we respect pure mezcal, genuine Mexican heritage essence.
Inspired by the legends and mysteries of Mexico, our land, we decided to begin a search for a drink that faithfully represents the customs, culture and the passion they have for their products.
Mezcal Los Siete Misterios is the result of this search. Los Siete Misterios produce a range of single varietal mezcals from agaves that are harvested between 7 to 9 years of age, and roasted in a pit over a wood fire. After roasting and a 72 hour rest, the pinas are removed and ground using the horse-drawn mill, and then fermented in wooden vats for the period of 2-3 days. The mash is then distilled in copper and clay stills. All the expressions are released in very limited quantities, and hand numbered bottles.
Los Siete Misterios Doba-Yej Mezcal Joven is distilled from 100% Agave Espadin. Doba-Yej is Zapotec for agave Espadin, and this name was chosen as this mezcal is different from the Los Siete Misterios Espadin. It is the first expression from Los Siete Misterios that is made in a copper still rather than the clay pot still. Comes from San Luis del Rio, bottled at 47% alc/vol. Limited edition of 1008 bottles for 2016.
Tasting Notes
NOSE: Notes of lemon citrus, lime, grapefruit and apple, touch of smoke. Violet tones and delicate floral notes of sweet toasted caramel cooked agave.
PALATE: Medium weight, citrus, floral notes, chocolate, agave sweetness.
FINISH: Medium, grassy, fruity.
