Seated in Biard, Grande Champagne, since 1610, Guillon Painturaud is a 18 hectare estate. Today, Line Guillon Painturaud, one of Cognac’s few female master distillers, signifies her family’s four centuries of experience. Ugni Blanc is the only varietal grown on the estate. After harvest grapes are pressed, fermented, and twice distilled on the lees, using a traditional copper still. For the second distillation, spirits above 60% alc/vol, are re-distilled with the next batch of Brouillis (the product of initial distillation). Spirits below 60% alc/vol. are re-distilled with the next batch of wine. The “heart” of this second distillation is extracted at 18 degrees Celcius. The spirit matures in bespoke French oak barrels. For the first six months, the small fraction of eau de vie rests in new French oak (Troncais), and then moves into “futs roux” (Limousin). As House Guillon Painturaud is a member of the Vigneron Independent, a producer society dedicated specifically to wine growers who undertake every aspect of production in-house, their releases are brought to proof on the estate, and hand bottled.
Guillon Painturaud Hors d’Age Grande Champagne Cognac is “beyond age” grade Cognac, equal to XO, but commonly used by producers to designate a product beyond an official age scale. Guillon Painturaud Hors d’Age Grande Champagne Cognac is matured on average of 30 years, and was called “beautifully complex and mature” by Wine & Spirits Magazine.

Tasting Notes
NOSE: Nutty, almonds, raisins, figs.
PALATE: Leather, ripe fruits, oak, vanilla, plums, prunes.
FINISH: Medium to long, oak, caramel.
