Derrumbes San Luis Potosi Salmiana Crassispina Mezcal Joven is made by J. Manuel Perez in Charcas, San Luis Potosi. The idea behind this unique mezcal is to take each drinker on a journey through the different agaves, terroirs, and production techniques, so each spirit would have a different layer of complexity.
Derrumbes San Luis Potosi Salmiana Crassispina Mezcal Joven is made using Salmiana agave, that are picked at their maturity and then cooked in an above ground oven known as hornos, using volcanic rocks heated by the tahona method. The salmiana agave juices are then fermented naturally in masonry vats with wild yeast.
Derrumbes San Luis Potosi Salmiana Crassispina Mezcal Joven is twice distilled using copper pot distillation. This process adds to the unique character of the mezcal, which after distillation is 43.5% alc/vol. and is rested in a large glass bottle before the final bottling.
Tasting Notes
NOSE: Relatively austere.
PALATE: Sweet, complex, traditional mezcal.
FINISH: Long, well balanced, fruity.
