Derrumbes Michoacan Chino Alto Mezcal Joven is made by J. Guadalupe Perez in Michoacan, Tzitzio. The idea behind this unique mezcal is to take each drinker on a journey through the different agaves, terroirs, and production techniques, so each spirit would have a different layer of complexity.
Derrumbes Michoacan Chino Alto Mezcal Joven is an exotic combination of rich and pungent agaves that are picked at their maturity and then cooked in an underground pit oven using black oak. After the agaves are cooked, they are transported to a mechanical mill, where the are smashed and grounded. Michoacan is fermented in underground tanks lined with pine, which adds to the herbal character.
Derrumbes Michoacan Chino Alto Mezcal Joven is distilled using the Philippine method, which predates copper pot distillation. This technique requires that the body of the still be made from the hollowed-out tree trunk with the alcohol vapors condensed by a copper pot full of water, that sits at the top of the trunk. This process adds to the unique character of the mezcal, which after distillation is 44.6% alc/vol. and is rested in a large glass bottle before the final bottling.
