Conquilla, Catalan for “shell”, is an estate-grown Cava available in both white and rosé which delivers impeccable, family-farmed quality; an attractive price; and an eye-catching package alluding in playful fashion to its genesis in the sedimentary limestone soils of the Penedès valley west of Barcelona.
Conquilla Brut Cava is made with 50% Xarel-lo, 25% Macabeu, 25% Parellada. All-estate fruit. After primary fermentation, a long, slow secondary fermentation at low temperature followed by twelve months’ aging sur liein bottle before disgorgement. Pale gold with an emerald rim. Fine, delicate bubbles. Citrusy nose with overtones of bay leaf and orange. Velvety on the palate, with good acidity framing notes of white fruit and a hint of almond on the finish.
