We grow our own barley on our family farm in the shadow of the Galley Head lighthouse. Centuries of sea mist, soft rain and ocean spray provide a complexity to the soil that permeates through to each individual grain. We source our water from a single well on our family farm. Remote and unspoilt, it is drawn from deep within the ancient rock formations, naturally filtered through multiple layers of sandstone and baryte, one of the hardest rocks known to mankind. Clonakilty Distillery founders the Scully family have farmed this coastal land for nine successive generations and over 320 years. “Our hearts feed our passion, that entrepreneurial spirit to innovate and create, born of a deep understanding of our natural surroundings”.
Clonakilty Double Oak Irish Whiskey is the flagship of Clonakilty’s Cask Finish Series. It was matured in ex-bourbon casks, and finished in virgin American oak, and shaved, toasted and re-charred ex-red wine European oak casks (NEOC, New Era of Cask).
This makes it the world’s first Irish whiskey to be finished in a NEOC cask. NEOC are ex-red wine barrels from the Bordeaux region of France. They are hand-shaved by traditional coopers, and re-toasted according to each individual distiller’s specification.
Tasting Notes
NOSE: Soft spices, vanilla, fresh cut grass, slightly perfumed, ripe apple/pear notes. Fresh leather tones.
PALATE: Warm spices – cubeb pepper and ginger. Fresh cut grass, hazelnut and almond notes.
FINISH: Long finish with vanilla sweetness and spices lingering on the palate.
